O and I finally got around to thanking our family & friends for helping us move with a proper dinner party to help warm our almost-done home!

The menu turned out well although I would do a few tweaks when I make these again.
Chicken and Sun-dried Tomato Bruschetta
Notes:
We nixed the chicken since it was our main. Also, I forgot after I made the orzo salad below that some of that feta was for this dish. I improved with goat cheese and it turned out WAY better. You could add pine nuts and definitely go heavy on the sun-dried tomatoes! Yum.
Chicken Curry with Squash
Notes:
I chose this because I had a huge yellow squash to use and wanted something different. I'd have to tweak this a lot. First, don't be afraid to add on the spice. It was a bit bland. I would add more spice, more peppers. And honestly, I probably under-seasoned it on the salt and pepper, too. Kick it up a bit and it's awesome.
Cabbage Lime Salad
Loved this and it was raved about. It was a smidge too much salt for my taste. I'd also add more peanuts.
Orzo Salad with Tomatoes, Feta & Mint
Notes:
I loved this but it needs a ton of tweaks! First of all, the mint is without-a-doubt what makes this dish. The balance of everything is a bit off. It calls for way too much orzo (I also tweaked to accommodate 9, so that is always tricky...) so I'd reduce that. I also added in an chopped orange pepper, which was a great crispy element. I added a lot more feta than it called for. I'm not a huge fan of olives, so I went a bit sparser on those. This dish would kill with some sun-dried tomatoes added in. And I'd do a smidge more mint - the key is balance, though.
I'm so glad we forced ourselves to tackle this long-awaited dinner and thankful for all of the moving help we got from O's family as well as Shana & Joel!
